Loukoumathes (Greek Donuts)

Alicia and I have an affinity for donuts.  Our love of donuts borders on religion…even our dog is in love with donuts.  Over the years I have told Alicia about the Greek donuts but she had yet to experience them for herself.  They are incredibly simple to make and don’t require as much expertise as you would think.  There are so many options to finish these donuts.  The two typical options are honey soaked, and powdered sugar.

These are best served fresh but don’t worry they’ll be gone long before you even have to worry about storing them.  Make sure you have a few people around to help you eat these as the recipe makes approximately 40-60 small donut bites.

Cook Time: 2 minutes
Total Time: 17 minutes

A classic Greek treat - made two ways!

Ingredients

Batter

  • 1 package of active dry yeast
  • 2 cups warm water
  • 1/2 cup warm milk
  • 3 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp pure vanilla extract
  • Orange Zest (optional)

Syrup Option

  • 1 cup honey
  • 5 whole cloves
  • 2 cinnamon sticks
  • 2 cups water
  • 1/3 cup cane sugar
  • Orange Zest (optional)
  • Cinnamon Sugar for garnish

Powdered Sugar Option

  • 2 cups powdered sugar (icing sugar)

Instructions

  1. Mix yeast, warm milk and water until the yeast is dissolved.
  2. Add salt. Add flour 1 cup at a time. Mix by hand until it`s nice and thick.
  3. Cover the bowl with plastic wrap. An easy way to secure the wrap to ensure a tight seal use an elastic band. Allow the batter to rise to about double its current size (About 1.5 hours).
  4. While waiting for the dough to rise, you can make the syrup if that is the option you`ve decided on (I like to do a bit of each option). Mix all the ingredients for the syrup option in a saucepan. Bring it to a boil and reduce heat and allow to simmer until you achieve a syrup consistency (about 15-20 minutes). Allow syrup to cool slightly.
  5. In a deep pot heat vegetable oil to 360°F. Use two spoons to drop small balls of batter into the hot oil. It may help to dip the spoons in water prior to scooping the batter. This may help it from sticking to the spoons. Don`t fry too many donuts at once and crowd the pot. Turn the dough while they cook until both sides are a golden brown and slightly crisp. Remove them with a slotted spoon and place on a paper towel lined cookie sheet to drain and cool.
  6. Finish the donuts with either the honey option (by dipping in honey - or pouring over the top), or roll in powdered sugar and enjoy!

I am so glad we added miniature trees to the girls I am so glad we added miniature trees to the girls' bedrooms this year. They absolutely loved having their very own tree to decorate with their collection of ornaments and handmade treasures.It was a simple and inexpensive way to add an extra dose of holiday magic to their rooms, after all, there is nothing better than witnessing Christmas through the eyes of a child. They truly find such beauty and magic in even the smallest of details. 🎄

See that little half-wall with the hats, well we've removed it so that we see right into the kitchen now and it's amazing! We've been making great progress, just yesterday our new sink, faucet, and counters were all installed. It's all of these little changes that are making such a big difference. We'll have a few more details to take care of after the holidays, but we're really looking forward to crossing the finish line and sharing it all with you!

Early next week our window and countertop will be installed, so Nick’s been busy removing our existing counters and sink. It’s so exciting to see it all come together and I’ll be happy to have running water again next week!
